SECTION 1

POTATOES

The potato is a starchy, tuberous crop from the perennial nightshade
Solanum tuberosum. In many contexts, potato refers to the edible tuber,
but it can also refer to the plant itself. Common or slang terms
include tater and spud. Potatoes were introduced to Europe in the second
half of the 16th century by the Spanish. Today they are a staple food in
many parts of the world and an integral part of much of the world's food
supply. As of 2014, potatoes were the world's fourth-largest food crop
after maize (corn), wheat, and rice.

SECTION 3

HOW TO
PLANT
POTATOES

Potatoes are a staple of several ethnic diets. The process of growing
potatoes is simple.

Tips

•If you want to plant potatoes from a seed company or garden supply center,
make sure that they are from a disease-free strain.

•If you leave any potatoes in the ground, they'll pop up again next year.
While this may seem an easy thing, it is not a good idea to grow potatoes
in the same soil the following year as this increases the likelihood of
diseases through soil depletion. The ideal garden should be rotating crops
of all vegetables, including potatoes.

•You can get two crops per year; one in the summer if you plant in spring
and another in early winter if you plant in fall.

Warnings

•Do not eat green potatoes or green parts of potatoes - these are poisonous
in large quantities.

•Stony ground leads to oddly shaped potatoes, so carefully remove all stones
from your patch if you want uniform produce.
